Cutlery is loosely defined as implements for cutting and eating. While no one knows for sure when the first cutting tool was created or used it’s probably safe to say that the discovery by ancient man of a tool for cutting and chopping was probably a total accident. What we do know today is that life in the kitchen wouldn’t be the same without the ability to cut, dice and mince that these modern tools bring us.

More commonly known as silverware or flatware in the U.S. cutlery has the more specific meaning of knives and other cutting instruments used for preparing, serving and eating food. From all corners of the world every community has used knives to cut meat, trim, dice and slice vegetables and to decorate and serve desserts. Each of those communities has added its own distinctive twist to the manufacture of modern cutlery as we know it.

New manufacturing techniques by various manufacturers around the world are bringing us ever more useful cutlery that is safer and more comfortable to use and overcomes the hygiene problems found in older methods of manufacturing. Using both forged and stamped processes the various cutlery makers around the world are creating knives that stronger, more durable and maintain their cutting edges for longer periods of time.

Ceramic kitchen knives, pioneered by Kyocera, are now being made by a number of manufacturers at a number of price points. These are incredibly sharp and highly functional knives. They do have some issues with maintenance and must be carefully used and protected when not in use.
